Kale (Brassica oleracea)
Our mix of two kale varieties, green and red, are as hardy as they come and grow well through all but the coldest temperatures. Kale is a packed with minerals and vitamins and can be eaten fresh, sauteed or steamed. We love it steamed with umeboshi vinegar.
Origin: We saved our green kale parent seed from the plant pictured at the Real Jardín Botánico de Madrid, the gorgeous botanical gardens in the heart of the Spanish capital. Our red kale variety originates from seeds we collected on the farm of a cousin in Hungary.
