Pak Choi (Brassica rapa subsp. chinensis)
Pak Choi is an ancient cabbage variety that is ubiquitous in Chinese cuisine. We brought the parent seed of our pak choi home from a trip to China and it is wonderful stir-fried, in soups and kim chi.
Pak choi grows best in cool conditions, in both spring and fall, and the cabbages are ready to harvest 40-50 days from sowing.
Origin: We saved the parent seed of our Pak Choi from a community garden in Hong Kong near the French International School of Hong Kong.

Germination rate: 85% - tested 9/1/24
Planting Instructions: Sow seeds directly in the garden in full sun 2 to 4 weeks before your average last frost date, when soil temperature is at least 60°F; ideally 75°–85°F. Sow again in late summer for fall crop. In mild climates, sow in the fall for winter or spring harvest.
